This week's recipe is another one of my favorites ! It's not only packed with flavor, but sustainable and easy to prepare! Definitely a win in my book.
Recipe: Chop chicken breast and veggies to desired size. Coat pan with cooking spray and turn on medium high heat. Toss the chicken and veggies into the pan and season with salt, garlic, and chipotle seasoning mix . Once the chicken and veggies are done top with fat free cheese and cover with lid to melt.
Place tortillas on a plate and spread the nacho cheese ensuring both tortillas are covered. Place one tortilla in a pan making sure it is coated with the non-stick spray first. Add your chicken mixture on top, then cover with another tortilla. Cook until golden brown then flip to ensure the other side is cooked as well until golden brown. Once done, cut and enjoy.
Cook Notes: This meal can be high in protein and nutrient dense, and can cater to any nutritional needs by choosing the amounts of protein and or fat amounts that you use. When I prepare this for myself I use 1 whole chicken breast and 1 1/2 servings of fat free cheese.
